How to Partially Thaw and Separate Frozen Weathervane Scallops

As you know, we take great pride in the quality of our wild seafood, and one of our most popular items is our Wild Alaska Weathervane Scallops. These come in 1.25 lb blocks, with the scallops frozen together rather than individually. This is because our fishermen shuck, clean, pack, and freeze them within hours of harvest, right on the boat, while at sea, locking in peak freshness. Once fully thawed, they are very easy to separate, but we know some of you ask for smaller portions-especially when cooking for one or two.

In order to offer smaller portions, we'd have to thaw and refreeze them on land, which could affect their texture and taste. Instead, we simply vacuum-seal the blocks before shipping to maintain their incredible freshness, flavor and texture.

That said, if you’d like to enjoy some scallops now and save the rest for later, there’s an easy way to partially thaw, separate, and refreeze them without compromising quality.

Follow these simple steps to portion your scallops while keeping them at their freshest:

1. Begin Partial Thawing

Fill a large bowl with cold water (do not use warm water).

Submerge the package of scallops in the cold water for about 15–20 minutes. This will soften the outer edges slightly while keeping the interior frozen.

2. Separate the Desired Amount

Once the scallop block is slightly thawed and pliable, remove it from the bag and place it on the cutting board.

Use your hands or a knife to gently separate the portion you wish to prepare. Work carefully to avoid damaging the scallops.

3. Refreeze the Remaining Scallops

Immediately transfer the unused portion into a freezer-safe bag or container. If you have a vacuum-sealer, even better, that will help lock in the freshness even longer.

Label the package with the date and return it to the freezer promptly.

4. Cook and Enjoy

Allow the scallops you plan to cook to finish thawing and then rinse under cold water. Pat dry with a paper towel.

Your scallops are now ready to prepare!
