Ingredients
Fish:

4 x 8oz portions of Premier Catch Wild Pacific Halibut or Alaskan Cod

2 tbsp olive oil

paprika
-
cumin
-
chili powder
-
salt
Taco Sauce:
-
1 cup sour cream
-
1/4 cup mayo
-
2 chipotle peppers in adobo sauce

1/2 lime juice, juiced
-
1 clove garlic
Mango Salsa
-
3 mangos
-
1 bell pepper, chopped
-
1/2 cup red onion, diced
-
1/4 cup cilantro, chopped
-
1 jalapeño, seeded and diced
-
1 large lime, juiced
-
1/2 tsp salt
Tacos:
-
Iceberg lettuce
-
Purple cabbage
-
Avocado, sliced
Directions
Fish:
Preheat oven to 400. Cut defrosted halibut (or cod) into 1 1/2" strips and lay on parchment paper on a sheet pan. Drizzle olive oil over the pieces. Sprinkle salt, cumin, paprika, and chili powder over each piece, turning to cover all sides. Set aside to marinate while you prepare the rest.
Place sheet pan in 400 oven for 10-12 minutes, until fish is starting to flake but still opaque in center.
Mango Salsa:
Peel and slice three mangos. Chop into 1/2" cubes.
In a serving bowl, combine mango with bell pepper, red onion, cilantro, jalapeño, lime juice, and salt.
Taco Sauce:
In a food processor or blender, add the sour cream, mayo, chipotle peppers, garlic, and lime juice. Blend until smooth.
To Assemble Tacos:
Heat flour or corn tortillas, place fish inside and top with cabbage, lettuce, fresh sliced avocados, mango salsa, and taco sauce. Serve with Mexican rice, beans, and a side of chips.
