Ingredients

2 x 8oz of King Salmon

garlic powder
-
salt & pepper
-
2 cups of arugula

1 cup long grain rice

¼ cup cherry tomatoes, chopped

¼ cup cucumber, chopped
-
handful of olives, halved
-
pickled onions
-
tzatziki
-
optional: fresh lemon
Directions
Preheat oven to 400 degrees. Thaw salmon and pat dry.
Season salmon with salt, pepper, garlic powder, and fresh lemon juice.
Bake salmon for 10-12 minutes.
While the salmon cooks, chop the vegetables and cook rice.
Assemble arugula, rice, vegetables, and salmon on a plate.
Top or toss with tzatziki. Enjoy!
