2 x 6oz Wild Alaskan Sockeye Salmon

1/4 cup Tamari or Soy Sauce

1 tbsp Toasted Sesame Oil

1 to 2 tsp Crushed Red Pepper Flakes

1/4 cup Chopped Green Onion, divided

1 cup Cucumbers, sliced

1 tbsp Rice Vinegar

1 tsp Honey
-
3-4 cups Sushi Rice

Avocado, diced
-
Chopped Carrots
-
Fried Shallots

Sriracha Mayo
Directions
Salmon Poke:
Skin and chop salmon into bite size pieces.
Mix salmon with soy sauce, toasted sesame oil, red pepper flakes, and green onions.
Cucmber Salad:
In another bowl, mix thinly sliced cucumber with rice vinegar, honey, salt, and more chili flakes. The longer this sits, the more flavor it will have.
To Assemble Bowl:
Start with white (or brown) rice, add poke, cucumber salad, sliced carrots, and avocado.
Top with fried shallots, sriracha mayo (Japanese mayo + sriracha + sweet chili sauce), and more green onions.
