Ingredients

2 tbsp olive oil

½ medium onion

3 large eggs

½ cup milk or cream (I used whole milk)

½ cup grated gruyère cheese (sub parm for less rich)

2 tbsp grated Parmesan cheese (sub mozzarella for less rich)

½ tbsp flat leaf parsley, minced
-
salt & pepper
-
tabasco sauce
-
1 cup Wild Oregon Bay Shrimp
-
2 round pie crusts
Directions
Preheat oven to 350 degrees and spray a muffin tin with olive oil.
Heat olive oil in a skillet over medium high heat and satué the onions until soft and then set aside.
Beat the eggs in a medium bowl. Stir in cream, cheeses, parsley, salt, pepper, and tabasco. Stir in the onions once cooled. Add 1 cup shrimp
Cut the pie crust with a round cookie cutter or wine glass. Place the rounds in the muffin pans.
Divide the egg and cheese mixture evenly in each muffin.
Bake for 25 minutes.
