Ingredients

2 medium corn tortillas

olive oil

1 tsp taco or fajita seasoning

1 bell pepper or ½ yellow, ½ red, diced

½ yellow onion, diced

½ cup shredded Mexican blend cheese

1 cup Wild Oregon Bay Shrimp

toppings: sour cream and green onion
Directions
Thaw shrimp and pat dry.
Chop vegetables and add to a skillet over medium-high heat with olive oil and taco seasoning. Sauté until soft- about 5 minutes.
In another skillet, heat a small amount of olive oil or butter over medium heat and then add one tortilla.
On one half of the tortilla, layer ½ of the Mexican cheese, ½ of the vegetables, and ½ of the shrimp. Flip the other half to cover. Cook for 3-5 minutes.
Repeat the last two steps with the remaining ingredients.
Serve with sour cream and diced green onions. Enjoy!
