Ingredients
Fajitas:

1 tray of Wild Alaskan Spot Prawns

3 bell peppers (red, yellow, orange)

1 sweet onion
-
olive oil
-
1 packet taco seasoning of your choice

1 lime
Lime Crema:
-
½ cup plain greek yogurt
-
1 lime, juiced
-
1 clove minced garlic
-
1 tsp honey
-
salt & pepper
Serving:
-
warmed tortillas
-
cojita cheese
-
lime wedges
Directions
Preheat the oven to 425 degrees.
Slice the peppers and onions and toss in olive oil and taco seasoning.
Line a baking sheet with parchment paper and roast the veggies for 15-20 minutes, rotating twice.
While the veggies cook, toss the prawns in olive oil and taco seasoning and let marinate.
Add the prawns to the sheet pan and cook for 6-8 minutes.
For the crema, whisk ingredients together in a small bowl until smooth.
When the prawns are finished, assemble your fajitas with peppers and onions, prawns, and a drizzle of the crema. Optional: add cotija cheese, pickled onions, and fresh cilantro.
